Over the Easter Weekend, I was tempted by friends to buy an Instant Pot while it was on Sale. I um'd and ah'd about it for a couple of days, and then when I was out at the Grocery Store on Saturday I saw one and impulsively bought it.

I didn't do much research on it beforehand, but I got the Instant Pot LUX 6-in-1 6 quart, which I was told would definitely be enough to feed 4 people (including another child should we try for Baby #2). And yes, I'm searching Etsy for stickers and wraps for it as we speak.

But I've also never used an Instant Pot before, and so tonight I experimented with a recipe I found on an app called Yummly (I really recommend it for Parents or people who are bored af with food). And I can gaurentee you, that even if you're forgetful like me and cook from Frozen, nobody in your home will be disappointed in how delicious this recipe is + the wonders of an Instant Pot. And if you don't have an Instant Pot... GO AND GET ONE NOW!

INGREDIENTS:
3-4 boneless, skinless chicken breasts
Salt and pepper to taste
1/2 cup honey
1/3 cup soy sauce
1/3 cup onion, diced
1/4 cup ketchup
2 tablespoons vegetable oil
4 garlic cloves, minced
3 teaspoons cornstarch dissolved in 1/4 cup water
Sesame seeds for topping (optional)
Rice for serving

RECIPE:
Place your chicken in the bottom of the Instant Pot. Season well with salt and pepper.

In a small bowl, combine honey, soy sauce, onion, ketchup, oil, and garlic. Pour the mixture over chicken and put your Instant Pot Lid on and set to seal.

Cook on the Normal Meat setting for 15 minutes (20 minutes if cooking from Frozen) and then quick release once the 15 minutes is up. Remove chicken from pot, leave the sauce in the pot.

Dissolve 3 teaspoons of cornstarch in 1/4 cup of water in a small bowl and pour into your Instant Pot. Stir to combine with sauce. Push the Saute button and cook sauce for about 5 minutes or until slightly thickened.

Cut the chicken into bite size pieces, then return to pot and toss with sauce before serving. Sprinkle with sesame seeds, and serve over rice.

TRY IT NOW! It's the most delicious recipe I've ever tried, and I've never seen the boys lick their plates as fast as they did tonight! It's an amazing recipe, especially for a first time user of an Instant Pot!
